Ever since biscotti — sliced, twice-baked cookies from Tuscany — invaded the American cookie scene some decades ago, this variation starring green pistachios, red cranberries, and orange zest has become a holiday classic. A drizzle of orange-spiked glaze makes the cookie even more festive.
You can follow the directions below to make standard-sized biscotti, or you can make them larger (coffeehouse-size) or smaller (bite-size), as you like. To switch things up, try substituting almonds or hazelnuts for the pistachios or use a combination. (Recipe adapted from my book Ciao Biscotti)
