Well I just took out my copy of "Balanced Recipes" to have a look at it. It's funny, I can't remember if I've ever even looked inside before. What a nice surprise! Dozens of my grandmother's own recipes, handwritten on the blank pages. Some very strange ones, too:
Egg Plant
Boil egg plant
scoop out the meat and mix 2 tsp butter - 1 egg salt & pepper to taste
I have a great idea! You should send your left overs to one winning comment writer every week via same day mail!! Better still, just send them to me! Granted some will travel better in the mail than others. For example, last week's cake might have a rough journey. Certainly rice pudding isn't intended to interstate travel through the mail. The Pineapple Upside-Down cake might arrive right-side up. But this week's offering I think would do quite well. So too would the brownies of a few weeks back...sans the apricot spread. As always, I digress...so today at work, I was reading your opening paragraph to 2 co-worker's as we gazed at the picture of the Blueberry Squares on the computer. When I read aloud the recipes suggestion to serve the Squares warm with a bit of butter, simultaneously the 3 of us "mmmm'd" and "oooo'd. They looked so delicious and the suggestion was perfect. Ya know it's interesting...looking at the Squares, the texture has the look of cornbread, especially the top crust. So yummy!! Anywho, see ya next week. I'll check my mailbox in the morning...😁
🤣 Good assessment of the travel-worthiness of the treats. 🤣😂 They were so good, Donald, and you’re right—the crunch was like cornbread but the rest of it was like a tender blueberry muffin. On my way to FedEx to overnight to you 😉 🤗
So many of the recipes that I remember from my Mother used shortening. I still remember buying those big cans of Crisco! I like that we can now use butter instead. Thanks for including that with your recipe, Jolene. These look delicious!
These look so easy and delicious which is pretty much everything I'm looking for in a recipe! I'm going to try a dairy-free version this week.
