I do remember my first ever waffle: In Brittany, a hole in the wall at Mont St Michel, in fact, a little rosette of Chantilly cream in each waffle hole. I think powdered sugar was involved. Sublime. 45 years later, and I can still smell and taste that Brittany butter. Now you're giving me recipes and reasons... Uh oh. Usually my husband is the waffle wrangler in this house, but maybe I could have a go.

At the Seattle Worlds Fair 1962 I was a soldier with the Canadian Army & we performed the Military Tattoo in Sept. 1962 !! And today whenever I look through a flyer & see waffles I always think of the Belgian Waffles I had there !! They were one of the most delicious things that I have ever eaten !!
For some reason this popped up today. What memories! I loved those waffles. I remember going to the worlds fair with my family when I was 10. And later in the summer my cousins came down from Boston and I got to go again! Belgian waffles 🥰🥰🥰 Thanks for the memory, Jo 😘
We drove down from Massachusetts. I remember the song, "It's a small world after all." I was five. Geez. I'm kind of an unreliable witness. I vaguely remember a geodesic dome, but maybe that was Montreal.
I think we combined the world's fair in New York with climbing the Statue of Liberty. The arm was closed because the arm was weak and my brother was trying to figure out how to knock the arm off by kicking at the bottom stair.
At a gas station we got plastic dinosaurs. I was conflicted because my dad was a creation scientist and I didn't know if dinosaurs were real.
I was 10 and “it’s a small world” is now playing in my head (thanks?:) There was a geodesic dome at the fair in Queens (I think Montreal, too) I got a kick out of your brother’s attempt to take down the arm and your dinosaur conflict.
At uni one of my summer jobs was as a courier taking coach loads of drunken Brits on the ferry to France and Belgium. The couriers were bribed with waffles by Belgian cafe owners to recommend their particular establishments to the tourists. Thanks for the reminder of that fun time in my life. Maybe I will dust off the waffle maker x
I wish I could have been at that 1964 World’s Fair in New York , but the next best thing is reading your memories of it, especially those waffles. Thanks to this piece and your pictures I may just have to send away for a Belgian waffle iron. Those doughy waffles I’ve encountered in the breakfast rooms of Best Westerns while on the road simply don’t hold a candle!
Ruth, I got a cute little one that makes 2 waffles at a time for $31, lots online to choose from! Also, I should’ve mentioned that you can substitute AP flour for the French flour 🤗
I should’ve mentioned you can freeze the yolks for another bake! Also: you can use all purpose flour in place of the recommended flour. Thanks, Alison! 🧇😃
