I love the color and how you describe it as sunny and then later the taste as bright. Sure seems like the perfect spring treat to me!

Oh those soufflés don’t look like they sank at all! A divine color! Believe it or not, I’ve never made a soufflé in my life, so this may be a first. I have some fabulous dried Blenheim apricots, my favorites, that might be perfect. You have also tempted my appetite to learn more about Sara Moulton. As always, your blog is a delight, Jolene! 😊💕

Let me know if you make them with your beautiful dried Blenheim apricots 🧡 I mentioned to Annette that the only trick is having everything in place so when you whip the egg whites you can quickly fold everything and spoon into the ramekins! And your post just sent me to an obscure cupboard in my kitchen to dig out some Royal Worcester ramekins that I believe I received as a wedding present from my English aunt. Soufflés look amazing 🤩 & what a fun story to read after finishing 'Julia' on HBO Go (I cannot get over how well Sarah Lancashire suits her role).

Game on! I know you’ll make beauties. The biggest thing is just having all your prep in order (like the butter-sugar ramekins) so that once you whip the egg whites it’s all go, go, go!
