I love rice pudding!! There's a place in NYC between Mott and MacDougal...nothing but rice pudding!! A million different flavors. Soooooo good. My fave's are chocolate and almond!!!

I’ll try it too, but I think short grain, or even sushi rice might be great — give it some interesting stickiness. Did you know that long and short grain rice have different starches, which is why they work in different dishes? (Yeah, you probably did.) They’re especially different when cold. That’s why they don’t use long grain rice for sushi.

Arborio works well, too, and medium and short grains will give it a nice creaminess (although this was plenty creamy after baking so long 😂)
