Never met a ginger cookie/biscuit I didn't like, so just printed this out to try them both in my 1968 kitchen (with original stove) which suddenly feels terribly modern now I know about yours . . .
These are my favorite cookies. I remember telling my dad about how much I loved them and how hard it was for me not to indulge now that I have to be gluten-free. Then the next day I went to a G-F bakery and guess what they had?! So now I know they will work, I'm going to have to try your recipes but with GF flour, to see how they turn out!
